Cuvée Blanc is a new wine, based on a parcel of Roussanne that was planted in 2016 with support from 20% Viognier. Intensely perfumed, layered and surprisingly refreshing given its component varieties, it's a tangy, chiselled, almost Sauvignon Blanc-like white with notes of oyster shell, citrus, green fig, some texture from lees contact and 30% malolactic and a herbal undertone. The grapes were gently whole bunch pressed and then the must was cold settled for 24 hours. The juice was racked into 500 and 600-litre Burgundian barrels where 100% spontaneous fermentation took place with natural, wild yeasts. The wine was matured for 11 months on the lees without racking, in French oak, of which 5% was new.
