Shannon Sanctuary Peak Sauvignon Blanc Elgin
Shannon Sanctuary Peak Sauvignon Blanc Elgin - The wine shows tremendous complexity with very distinctive and concentrated primary fruit aromas of asparagus, citrus, and bell pepper with underlying notes of richer, riper fruit.
The Sauvignon grapes are grown in seven different vineyard blocks, mainly planted on sandstone soils rich in mineral quartz crystals with a deep underlying clay base.
The soils act to reduce the varieties natural vigour and maintain low yields of highly flavoured grapes. About 10% of the blend is Sémillon fermented with natural yeasts and matured for three months in 100% new French oak.
