..."Still, not every red is artificially light: Cavit’s brisk, cranberry-and-strawberry scented pale red made from the schiava variety in Alpine northern Italy, for example, is a naturally exuberant 12% abv." David Williams The Guardian.
Cum Vineis Sclavis Schiava Trentino - Fragrant aromas of raspberry and cherry. The palate is delicate and fruity with bright, crunchy berry characters, fresh acidity and notes of almond on the finish.
The Schiava grapes are sourced from vineyards in the foothills of the Valle dell'Adige and Valle dei Laghi, at 250-350 metres altitude. After careful selection the grapes are pressed and vinified at controlled temperatures. Maceration on the skins lasts around seven days and is followed by a period of refinement in stainless steel and concrete, on fine lees.
